PODCAST READY FOR LAUNCH

Taste Test: Rich Chocolate Cupcakes

Whenever I come across a recipe for a healthy version of what is supposed to be a rich and delicious treat, I am always a bit wary. These little beauties however, are packed full of healthy ingredients and they absolutely blitzed the taste test with flying colours!

Inredients – simple!

Servings: Makes 12 cupcakes (2 would be a good snack or treat)

Ingredients:

  • 1 1/2 cups of mixed raw nuts – I used about 1 cup of almonds and 1/2 cup of walnuts
  • 1/4 tspn baking powder
  • 3tbspn raw cacao powder
  • 1/4 cup organic dark chocolate (70% cacao or more), melted (I did this over the stove – see below)
  • 1/4 cup coconut oil, melted
  • 1-2tbspn organic honey
  • 4 whole eggs
  • 3-4tbspn unsweetened almond milk (if needed)

Easy to follow instructions:

Melt the chocolate – you can do it in the microwave, I prefer to use the stove.

Start off by melting the dark chocolate - I did this on a stove, in a bowl, sitting in a pot of boiling water

Then, after blending the nuts, add to a bowl with the rest of the dry ingredients.

This is then followed by adding the chocolate, oil, honey, and eggs.

After it’s combined to the right texture, split it up between the patty cakes.

Stir until a consistent batter is formed, but make sure it doesn't go doughy!

After that, place in a pre-heated oven and cook for about 10 – 15 minutes.
Once they’re baked, I’m sure you won’t need any more instructions!

New series: 30 Days to launch a Podcast

After pondering about it all week I have decided that I am going to launch a podcast in 30 days!

The scheduled deadline is for Wednesday 7 August.

I’m planning on creating a new section on this blog to document it and make myself accountable so that I stick to that decision.

I mentioned yesterday that I am considering getting a podcast up and running next month and am already getting a lot of positive feedback. So I wanted to see if anyone has some suggestions for good set ups? Microphones, mixers, recording software…Any help at all would be greatly appreciated!

Week 10 Day 66: Active rest day and thoughts about starting a podcast

Screw it. Let’s do it! – Richard Branson

So after having a few chats with a mate, we have decided that we’re going to launch a podcast next month! I pushed for next month because I think we may as well get started and see how it goes.

The truth is, the more that I listen to podcasts, the more time I spend thinking about actually doing one. To be perfectly honest, I’m thinking about it A LOT.

This 12 week fitness challenge that I’m currently doing is coming to an end. It’s got me thinking about what I should do next.

Sunday 21 July is the scheduled end date for this 12 week Lean Body Challenge.
I’m definitely going to move on to another 12 week program, I’m just not sure which one yet.

If anyone has some suggestions about workout plans, I would love to hear from you!

Also, if I was to do a podcast on fitness, what would you like to hear about?

Today’s active rest day was spent cycling to and from work. I also found out today that we are moving offices, so instead of a 13km ride to work, it’s going to be a bit over 19km’s. So it will be interesting to see how my body reacts to all of that extra cardio.
